Holiday Dark Chocolate Truffles
OK – Today’s post is completely different.
At our company holiday dinner we were discussing a variety of recipes – meatballs, red sauce… and thought that might be a fun addition to our blog. So here goes our first recipe – a Holiday Favorite:
1 cup heavy cream
12 ounces bittersweet chocolate – chop into small chunks
3 tablespoons unsalted butter
1/4 cup brandy
1/2 cup cocoa powder
In a saucepan heat the cream to a simmer. Stir in the chocolate until it melts – when completely melted take off the heat and stir in the butter. Next stir in the brandy (rum or experiment with a flavored cream liqueur try different flavors).
Pour the melted mixture into a bowl and refrigerate for at least two hours or overnight.
Next take the bowl out and let stand thirty minutes to warm up slightly – then scoop out a healthy tablespoon of the mixture. Quickly roll into a ball with your hands and drop into the cocoa powder to coat. Fish the balls out of the cocoa powder and place on wax paper lined baking sheet.
Eat – or store in the refrigerator.
For a kid safe version leave out the brandy or other alcohol.
